Ripe tea U3-1998

Aged tea speaks quietly. Its depth does the talking.

Stored since 1998, the earliest storage year among the teas THEN currently offers. This tea does not reveal itself all at once. It is deep and opens slowly. On the day the workshop tasted the full range, the note beside this tea read: “Our favourite to drink.”

FROM THE FERMENTATION WORKSHOP’S TASTING NOTES

The workshop’s notes

Fragrant and smooth. An attractive colour in the cup; dark red, almost black leaves after brewing.

How to brew

Always rinse the tea first. However you choose to brew, pour boiling water over the leaves for 5–7 seconds, then discard the water. Think of it as gently waking the tea after its years of rest.

When you have time to savour itUse 5–7 g in a small 100–150 ml pot. Steep the first infusion for 5–10 seconds, then gradually lengthen each subsequent infusion.
For an everyday cupUse 3–5 g with 500 ml of boiling water and steep for 2–4 minutes. No elaborate equipment, just a little patience.
When the tea needs more time to wakeFor long-stored tea, steeping is sometimes not enough. Try a gentle simmer: 2–3 g per litre of water, over low heat for 3–7 minutes.
To enjoy chilledBrew a strong pot with hot water, strain out the leaves, let the tea cool, then refrigerate for 2–6 hours.

After brewing, you can collect the spent leaves for garden compost.
